Summer is a popular time for refreshing treats and cool desserts. Ice cap drinks, iced cream, sno cones, and other rich tasting, sweet morsels are highly popular on a hot summer day. But these delectable are often loaded with sugar and other chemicals that are harmful to your health.
Enjoying the warm weather does not mean that you should sacrifice your health. This is a great time of year to indulge in the abundance of fruits and natural foods that currently in season.
If you are hosting a summer get together with friends, family, or neighbours, these wonderful recipes are not only great, refreshing dishes for the hot season, but healthy as well.
Fruity Frozen Yogurt
To make this fruity-licious snack you will need:
- 1 cup plain Greek yogurt
- 12 oz. frozen fruit of your choice (bananas, raspberries, strawberries, blueberries, mixed)
- 1/3 cup natural lemon juice
- 2 teaspoons fresh lemon zest
- 3 tablespoons honey
Blend all the ingredients together in a blender until smooth and free of chunky pieces. Place the mix in a large tub, small individual bowls, or popsicle making containers, freeze for 1 to 2 hours before serving. This dessert is perfect for kids and adults and will easily replace the sugary ice cream with a more nutritious option.
For this super easy dessert, you will need:
- 1 Angel food cake mix
- 2 pints fresh strawberries
- 1 tub low fat whip cream
Follow the ingredients outlined on the box to make the angel food cake. After making the pastry, slice the first pint of fresh strawberries into bite size pieces. After the cake has cooled, cut it across twice so you have a bottom, middle and top layer. On the top of the bottom layer, add whipping cream and strawberry chunks. Cover with middle section then repeat the first step. After covering the top of the middle section with whipped cream and fruit, add the top layer. Cover the whole cake with a light creamy coating, and place whole strawberries around the top. If you have any leftover fruit, you can sprinkle the remnants around the bottom of the cake. Your guests will love the lighter, more refreshing dessert.
This time of year, is rich in different fruits. Cut up your favourite melons into chunks, gather your tastiest berries, and dice cheese into chunks. Create a colorful layer by adding each fruit and cheese piece onto the skewer in sequence. Cut pineapples or watermelon pieces in the shapes of stars, hearts, circles, or diamonds for the perfect topper on your kabob. Drizzle lightly with dark chocolate and chill. Your crowd will enjoy the best of both worlds with this tantalizing assortment of nature’s candy.
Peach Jell-O Cake
For this peachy dessert, you will need:
- 1 box light peach Jell-O mix
- 1 cup hot water
- 1 cup natural Greek yogurt
- 2 large peaches
- 2 cups Graham cracker crumbs
- 6 tablespoons honey
To make the crust, warm the honey, then add the 2 cups of graham cracker crumbs. Mix thoroughly then place the mixture evenly on the bottom of the pan. Place in fridge to chill. For best results, keep in fridge for at least one hour before adding the top coating.
While the bottom is in the fridge, mix 1 cup of hot water with the Jell-O pack. Blend thoroughly until the powder has completely dissolved. Add the yogurt instead of cold water to the Jell-O and mix thoroughly until smooth. Pour over the crust bottom.
Cut the peaches into slices and spread liberally on top of the dessert. Chill for at least 2 hours before serving. This light dessert is the perfect finishing touch to a summer meal with loved ones.
